A simple yet nourishing omelet made with fluffy eggs, earthy mushrooms, and fresh spinach. This everyday classic is packed with protein and greens, making it a balanced meal thatās both comforting and energising.
Ingredients:
⢠2ā3 eggs
⢠½ cup mushrooms, sliced
⢠1 cup fresh spinach (loosely packed)
⢠1 tbsp olive oil or butter
⢠Salt, to taste
⢠Black pepper, to taste
⢠Optional: grated cheese (cheddar, mozzarella, or feta)
Instructions:
1. Prep the eggs ā Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined.
2. Cook the mushrooms ā Heat olive oil or butter in a non-stick pan over medium heat. Add mushrooms and sautĆ© for 2ā3 minutes until soft and lightly browned.
3. Add spinach ā Add spinach to the pan and cook for 30ā60 seconds, just until wilted.
4. Add the eggs ā Pour the beaten eggs evenly over the vegetables, gently tilting the pan to spread them out.
5. Cook the omelet ā Let it cook for 2ā3 minutes until the bottom is set.
6. Fold and finish ā (Optional) Sprinkle cheese on one side, then carefully fold the omelet in half and cook for another 30ā60 seconds.
7. Serve ā Slide onto a plate and enjoy hot.
